I have been making this chocolate cupcakes recipe for my 3 daughter’s birthdays for a couple of years now and they are ALWAYS a hit with the guests! Hence the title of this post! (see what I did there haha)  I often get asked where I bought them from or if I got them from the CUPCAKES store. That’s how delicious these cupcakes are! The frosting for the chocolate cupcakes is a simple buttercream recipe that adds just the right amount of extra sweetness to the cupcakes.

Chocoalte Cupcakes

Makes about 24-30 cupcakes.

Ingredients

  • 2 cups granulated sugar
  • 1 3/4 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk ( I usually use 2%)
  • 1/2 cup vegetable oil (I’ve used canola or olive oil in place of this)
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Heat oven to 350°F.

Line a 12 count muffin tin with paper bake cups and set aside.

In your kitchen aid bowl fitted with the paddle (note: you may use a large mixing bowl and hand mixing will work as well) , stir together sugar, flour, cocoa, baking powder, baking soda and salt.

Add the eggs, milk, oil and vanilla; beat on medium speed for 2 minutes.

Stir in the boiling water (note: your batter will be thin).

 

Fill baking cups with batter about 2/3 full.

 

 

Bake 22 to 25 minutes. Cool completely before frosting.

 

The Buttercream Frosting

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup shortening or butter
  • 1 teaspoon vanilla extract
  • 2 Tablespoons milk
  • 3-4 cups powdered sugar

In your kitchen aid bowl fitted with the paddle (a large bowl will work as well), cream butter, shortening (you can use unsalted butter if you do not have shortening), vanilla, and milk.

Add powdered sugar until desired sweetness is achieved, I usually use about 3-4 cups.

Adjust the milk to powdered sugar ratio depending on how you want the consistency of your buttercream to be.

Thicker = add more powdered sugar, Thinner = add more milk.

This is enough buttercream to frost about 30 cupcakes. (note: if you want the frosting piled high then I suggest you double the recipe)
